What to do with that bag of potatoes in the pantry

Who loves good comfort food?  I mean, get real, Who DOESN'T love good comfort food???  I made this a while ago when I made this other yummy soup.  The way this weather year is going, you might need another easy recipe up your sleeve.

Ingredients:
5 lb. potatoes (washed, not peeled), diced into 1\2 cubes
1 med onion, diced
10 garlic gloves (jarred=5t)
8 C chicken broth
16 oz cream cheese (softened)
1t seasoned salt
Garnishes-bacon, cheese, chives

Directions:
1. Add potatoes, onions, garlic, seasoning salt, and chicken stock to crock pot.
2. Cook on high for 6 hours or low for 10 hours.
3. Add softened cream cheese and puree soup until cheese is incorporated.  (Depending on how soupy you like your soup, add more or less broth to puree.)
4. Stir well--top with your choice of garnishes.

Enjoy!

It doesn't get easier than this!

Another easy meal for you here.  I got it from my sister, Emily, and my family usually eats it on a weekend when we get together.

And as an added bonus: it goes in the crockpot, people.  Only one pan to clean!
This is what you need to look for at the store:
It says pork, but I use it for chicken.  I haven't been able to find this in a n off-brand.

Since it is a little fuzzy, this is what you need: ketchup, brown sugar, and cider vinegar.

Put in the crockpot for 4 hours.  The chicken will be done when you can easily shred the chicken with a fork and knife.  If it is not easily cut, then leave it in the crockpot longer.

We serve it on tortillas with avocados and cheese.  Or you can serve it on hamburger buns.

Yummy!  Let me know if it works out for you:)))

Easy Peazy Crockpot meal

Good Morning!  Anthony just left for his first golf lessons (more on that later) and my in-laws and I are having a lazy morning before we hit the stores later.  I wanted to share a super easy meal that we love.

Sometimes I get annoyed with crockpot recipes because there is a lot of prep involved in making the meal.  Not this recipe!

Ingredients:
  • beef chuck roast
  • yams
  • 16 oz. jar of slasa
  • 1 C chicken stock or water (Not pictured)

Peel and cut yams.  Layer in the bottom of the crockpot.

Add meat and pour salsa over the meat and yams.

I actually forgot to put the chicken broth in this time, and it turned out fine.  I think I cook it for four hours on High, checking on it periodically.  I usually cook it on the weekend and have it for leftovers during the week.

*I do not like anything that has a hint of spicy in it!  If you are like me, don't be afraid of putting the salsa on it and trying it.  It actually turns out like a sweet flavor.

Let me know if you try it! Perfect meal to start the fall season:)
