Impossible Taco Pie

Last year when my grandmother was visiting (actually it could have been several years ago), she taught me how to make the recipe.  It is such an easy recipe and is husband and father-in-law approved.  


Impossible Taco Pie
Ingredients:
1 pound ground beef
1\2 C chopped onion
1 envelope taco seasoning
1 can (4 oz) chopped green chilies (drained) 
1 1\4 C milk
3\4 C Bisquick (or any pancake mix)
3 eggs
2 tomatoes sliced (I have used canned)
1 C shredded cheese

Instructions:
1.  Grease pie plate 
2.  Cook beef and onion (drain)
3.  Stir in taco seasoning
4.  Spread meat in plate top with chilies
5.  Beat milk, bisquick, and eggs until smooth
6.  Pour into pie plate
7.  Bake 25 minutes at 400 until knife comes out clean
8.  Top with tomatoes and cheese and put back into the oven until cheese is melted.

Pumpkin Waffle

I love fall!  Fortunately for me, I had some cans of leftover pumpkin.  SCORE!  Pumpkin waffles here we come!  I looked up a recipe a while ago, and it took me quite some time to find a recipe using an already made mix.  I thought I would share it with my lovely readers.



Pumpkin Waffle Recipe
Ingredients:
2 1\3 bisquick mix
1\2 C canned pumpkin
1 1\2C milk
1\4 C veg. oil
2 tspb. brown sugar
1 t. pumpkin pie spice
2 eggs
1\4 C chopped pecans 


I also throw in some flax seeds for extra crunch.  Depending on your waffle maker, you may have to add more bisquick mix.  I love the pumpkin flavor, so I always add more canned pumpkin and more spice.  

Hubs and I make waffles on the weekend.  When we are in a rush on the weekday mornings, we just grab a waffle to go.

Toad in the hole

My friend, Martha, asked me what the heck this was. I made them Saturday morning.  It is our usually go-to breakfast.  It is super easy to make, too.  We usually always have the ingredients on hand.  It can be breakfast, lunch, dinner, or a snack.  Give it a try!

Ingredients: butter, bread, eggs.  Butter the bread, both sides.

Cut a hole in the middle of the buttered bread.  Our glasses were a little bit too big, so we use an old jelly jar.  We would be lost without it!

Put on skillet or pan.  Crack egg in the hole.  Cook as long as desired.  Eggs over easy, medium, or hard whichever you prefer.  I like to have it a littler runny, so when I cut it, it goes over the rest of the toast.

Eat and enjoy.  I like to put strawberry jelly on it.  Hubs likes to put Tabasco sauce on it. (vomit)  But I guess to each his own.

Most Favorite Day Ever!

Favorite Thanksgiving Memory:  I love Thanksgiving.  It is probably my favorite holiday by far.  So, I have several memories to choose from...I loved how when I was younger, my mom would always find a way to have us help get ready for Thanksgiving.  It could be tearing the bread for stuffing, or making little turkeys out of ritz crackers and candy corn, or setting the table.  I loved being a part of it!


Favorite Thanksgiving Food:  Just one???  I love dark turkey meat, green bean casserole with lots of fried onion things.  Last year I discovered I really like sweet potato casserole.  Why on earth I have never tried it, I don't know.  Oh, almost forgot, I love stuffing with gravy, too!  See why I love Thanksgiving??

What is a Thanksgiving Tradition you and your family have? We make homemade donuts.  How cool is that?!?!   For breakfast, we make the dough, cut into donut shapes, fry in the back yard, coat in powdered sugar, cinnamon and sugar, or eat it plain.  We are even planning on spending the night at my parents' house this year, so we will be there in plenty of time to make the donuts.  We also always watch the Lions' games.  Not a big deal in my book.  

Something I am looking forward to the most:  Being able to relax with my family.  It is nice to not have to try to impress people but just be yourself.  That's what family is for.

This was taken a couple years ago at Eric and Sheryl's apartment.  This year, we have a lot more people joining us: Anthony, Lucy and Kyle (my sweet niece and nephew), and Alex's girlfriend.

Peek-A-boo Soup

I love this soup.  It looks like a lot of steps; however, it really is just dumping one ingredient in after another.   Some of the ingredients look like it would make it spicy, but it is NOT SPICY at all.  If you know me, I have a very low tolerance for anything spicy, but it is very flavorful.  Yum!

You will need a large pot for this as there is a lot of ingredients.

I don't know what the original name for this is.  My family named it Peekaboo soup when we were younger because my sister, a picky eater, would always try to peek under the tortilla chips to make sure she wasn't eating an onion or a tomato.  We still laugh about it today!  Isn't it fun making memories around the kitchen table?

It's okay that I am eating two huge chocolate chip cookies from Chickfila because that is a cut-down from the three I was eating.
It's okay that I have to wait to call my parents until I am not driving because they will hang up on me if they know I am driving and on the phone.
It's okay that each week of the school year makes me more stressed out and causes me to contemplate other careers.  This week's option: hotel customer service.
It's okay that I am a little jealous of all those people who like wine.  I so desperately wish to be in my kitchen, with an apron, cooking dinner, with a glass of wine.  I pretend with my tall stemmed glasses.
It's okay that other people have different birthing plans than I do.  (And it's okay to decline commenting about that because you don't want their opinion.)
It's probably not okay to vote only for the people who your dad tells you who to vote for.
It's okay to enjoy an evening alone at the apartment.

Around the kitchen table

Since getting married and moving to a place that I can call my own, I have learned that I really enjoy cooking. I didn't really cook that much growing up because my mom always did. My sister really liked to bake, but I never found myself in the kitchen much. I occasionally remember baking cookies. I would get all the ingredients out on the island table and talk to myself pretending that I was on a cooking show.

I love having a meal ready for Anthony when he gets home from work. This is one tangible way that I can show him that I love him. Although I don't do this every day, the satisfaction of making something and giving it to someone you care about and yourself is really a great feeling. If it turns out that way it supposed to, that is even better!

Anthony and I have a phrase above our kitchen table which says, "The fondest memories are made when gathered around the table." Although I was usually the one who wanted everyone else to finish their food faster, I recognize now that had my family skipped the actually sitting down together we would have missed a lot of the bonding time that helped solidify our family. For me, this phrase doesn't just apply to eating at the table. We love to play games around the table, too! Anthony bought this game called Farkle this last week while we were in Michigan. I bet over the course of the week different family members and us played at least 20 games of Farkle. (I definitely recommend buying this game. You actually only need 6 dice and the rules, which I am sure you can find online. It is also a great game for just two people.)

Having friends and family gather around the table for food or games or both is such a sweet time. Enjoy it!
